Stewed Watermelon
Ingredients:
1 small Watermelon, peeled, seeded, and cubed
2 tablespoons Sugar
Star anise
Method:
Heat a non-stick pan, add watermelon cubes, sugar, and star anise. Cook until pulpy.
Serve warm.
Watermelon Halwa
Ingredients:
3 large wedges of watermelon rind
2-3 tablespoons of ghee
1 tablespoon of suji (semolina)
1 tablespoon of besan (gram flour)
1/2 cup of sugar
1/2 teaspoon of cardamom powder
a pinch of nutmeg Powder
1 cup of milk
A handful of almonds & pista
Method:
Peel and chop the watermelon rind. Grind it into a paste.
Heat ghee in a pan, add suji, besan, and cook until brown. Add the melon rind puree and cook until thick.
Add sugar, cardamom powder, nutmeg powder, and milk. Cook until thickened.
Garnish with almonds and pista. Serve hot.
Watermelon Lemonade
Ingredients:
1/2 large watermelon, peeled, seeded, and cubed
4 tablespoons lemon squash
3 lemons
30 fresh mint leaves
3 bottles of drinking soda
Method:
Blend watermelon, lemon squash, lemon juice, and mint leaves.
Place lemon pieces and mint leaves in glasses. Fill half with soda.
Add reserved watermelon pieces. Top with watermelon puree. Serve.
Watermelon Feta Salad
Ingredients:
1 1/2 cups watermelon cubes
2 tablespoons sliced black olives
15 to 20 mint leaves
For The Feta Cheese:
1/2 cup grated paneer
2 tablespoons thick curds
3/4 teaspoon salt
1/2 teaspoon vinegar
Honey Dressing:
2 tablespoons honey
2 teaspoons lemon juice
Salt to taste
1 tablespoon olive oil
Method:
Mix paneer, curds, salt, and vinegar. Refrigerate.
Before serving, arrange watermelon, feta, olives, and mint.
Pour honey dressing. Serve.

500g watermelon, chopped
Handful of mint leaves
2 tablespoons sugar (optional)
